Why you may not put 15.7 gallons into an "empty" Escape
The published tank capacity is not a promise that every fill-up from the low-fuel warning will accept exactly 15.7 gallons. The vehicle can still have fuel in the tank when the gauge is near empty, pumps shut off at slightly different points, the vehicle may not be perfectly level, and the gauge is designed as an indicator rather than a laboratory measuring device.
I would not deliberately run the tank dry just to test the number. Ford has a separate procedure for a vehicle that actually runs out of fuel, and repeatedly driving until the tank is empty is not useful maintenance.
How far can a 15.7-gallon tank go?
Range depends on engine, drivetrain, speed, temperature, tires, traffic and driving style. If you want a rough estimate, multiply your own real-world miles per gallon by 15.7, then treat the result as a theoretical maximum rather than a target. The distance-to-empty display is more useful when it has learned your recent driving pattern.

Gas tank size vs. fuel type
Tank capacity does not tell you what fuel grade or ethanol content to use. Those are separate specifications. Use the fuel requirements in the owner's manual for your engine and market rather than assuming that a larger or turbocharged engine needs a different tank.
My owner note
On Alice, our 1.5L Escape SE, I use the 59.4-litre figure mainly for trip planning and fuel-cost estimates. Day to day, the amount that actually goes in at the pump is more useful than trying to make every fill match the brochure capacity.
